Pamela Canelake Matson (candy chef) and Andy Matson (candy chef II) are already cooking up a storm! Copper Kettle candy cooking is the best way to get top quality candy; along with the best recipes and ingredients. Our candy is cooked with top butter and cream from Al's Dairy on the north shore highway. Our newest candies include coconut caramels, dipped pretzels with caramel, and coconut joy creams. We have also made lots of handmade lollipops, which have favorite flavors, a dash of white chocolate and a gummi candy on top!

We have been open already for a week, the start of our 5th season. Thank you everyone for finding us for Mother's Day and for revisiting our store. There is a slight detour at the Knife River Bridge, but signs will direct you to Knife River. Pamela and Andy are cooking up a storm, using the copper kettle. Some new candies are COCONUT Caramels, Coconut Joys, Decorated Lollipops, and new licorice "chalk" from Holland. We have packed lots of Knife River Nibblers, our assortment boxes, and there is lots of fresh fudge, candy bars, and hand-dipped chocolates. Our "Salties" continue to be very popular. These sweet cream caramels are dipped in dark or milk chocolate and then sprinkled with sea salt. The combination of caramel, chocolate and the sea salt is incredible!

We are opening on April 30th for our 5th season at The Great!Lakes Candy Kitchen. There will be some new Lollipops, chocolates, and NEW T-SHirts designs celebrating the caramel appple and the nutty ice cream bar. We will be open every day from 10 am to 7 pm in May.. and starting in June we will open at 9 am to 7 pm. Come in for fresh Peace Coffee and enjoy the yard and view of Lake Superior across the road. We are on the scenic highway in Knife River, MN. There may be a detour, but its worth it to turn into Knife River, a beautiful little village.

Hello! As you may know, we are a seasonal candy store. We open every year on May 1st and are open EVERY DAY until New Years Eve Day. We are going to open from 9 a.m. to 6 or 7 pm every day and will have fresh coffee, hand-dipped handmade chocolates and candies. We will be starting our 5th season this year. We hope to add to our selections, adding new taste treats, new books & gifts, and new events to help celebrate spring, summer, fall, and winter. Last year we featured Key Lime Truffles, Susan Hubbartts lovely "Lucy" aprons, best toffee ever!, Andy Matson joined us, and we had a fun "I love Lucy" weekend. And we won't forget "The Year of the Saltie Caramel", a hand-dipped sweet cream caramel topped with sea salt.

You'd never know this adorable red-and-white shop was Mel's Fish. This long-time Knife River icon seems like such a natural fit for a sweet little candy shop. Pamela and Patricia Canelake and Pamela's husband, Dennis--grandchildren of the Canelake's founder--bought the building and replanted the family's chocolate roots in 2007.

Like Canelake's, one of Great! Lakes Candy Kitchen's best-known sweets is the chocolate-covered sponge candy dubbed Air Crunch." Among their other standouts are spicy ginger caramels with a hint of cinnamon, a maple cream bar covered in chocolate-covered peanuts, chocolate-covered sea salt caramels, and the wittily named U Betcha Bars--a generous caramel square dipped in chocolate and rolled in walnuts. It's on a stick, which is a fun nod to Minnesota's legendary on-a-stick-state fair food.

Indecisive? A Knife River Nibbler box can take care of that. And if you're missing Mel's Fish, you'll have to go to Russ Kendall's for your smoked fillets, but grab Great! Lakes tribute to Mel first: a chocolate fish.

Visiting Chinese Students help make Lollipops

The Nobles visiting from out of town, brought University of Minnesota visiting students from China. They were really fun, helping us make a big batch of lollipops. Lots of laughing and phototaking. We hope they will take back photos to China in a candy cultural exchange. There host parents, the Nobles, are teachers who are showing them everything they can while they visit the United States. We hope our little candy shop will be a good memory for them!

Preparations for Reopening on May 1st

Hurrah! We are ready for a candy extravaganza Year. Patricia is making chocolate molds. Pamela and Dennis are organizing everything. The store is shiney clean and we have a new marble table. The marble is an ideal surface for candymakers, beautiful to work on. Temperature of the marble plays an important part of how brittles, fondants, toffees will set.

We have some new items, handmade lollipops, rootbeer, raspberry, blue raspberry and blueberry. They are just the right size and look very pretty.

In the Mint category we realized that people just want more Mint! We are continuing to make the little mint lighthouses in white, milk, and now dark chocolate for the Lighthouse on Homestead Restaurant. We now have larger size chocolate mint lighthouses for sale in our candy store. Other mint confections will include a mint sweet cream fudge, a creme de menthe truffle, and mint lollipops in the future.

We are open on May 1st!

Marzipan....

Marzipan is an almond paste which has been formed into decorative shapes and decorated. When I went to Belgium and Germany, Marzipan was all over the place, especially at Christmas. Beautiful figures & animals were displayed in cases. They are like small art objects and are created with detail and care. Ours are a little more loose, but we loved the creativity the dough allowed. Many of our staff had a try and the results are charming. We have santa heads, elfs, candy canes, mice, cats and more!

Knife River Nibblers, our Best Holiday Gift!

December 31, 2008 is our last day for this season. We will open again in May 2009.
We are buzzing with activity, especially with the packing of the Knife River Nibbler candy boxes, an assortment of all of our chocolates, packed with care and expertise by Susan Hubbart & co-workers. We didnt get to go to Germany this year, but had German guests, Lisa Sander and Ove Sander, and they showed us how to make marzipan, a fun art-like experience where almond paste was crafted into cool shapes, santa heads, frogs, fish, and marzipan worms. This is a european delicacy featured especially for the holiday season.

Of course, we also made handmade candy canes .

The Knife River Nibbler assortment chocolate boxes were designed to provide customers with a beautific array of assorted candies. We hashed over the name with our staff, and experimented with the contents of our first boxes. I designed the label, and even had the idea of calling them the Famous Knife River Nibblers. At first we even had a swedish red gummi fish in the box. Then we decided to go for the classic approach, all fine chocolates with two pastel colored sugar coated almonds.

It was the best of times at great lakes candy kitchen with many friends ordering large amounts of the famous knife river Nibblers. All hands on deck, everyone is helping to pack candies, to dip, to mail internet orders. pamela, is cooking steadily, indefatigable, and dennis helping a lot too, plus working full time, and Im admitting to being tired. I just got back to st. paul, looking at all the beautiful gifts that i will mail tommorrow. the news says it will be the biggest mailing day tommorrow. ill wait in line with the crowds, we want the packages to get there on time,.

Pamela makes Candy Canes & Ribbon Candy

Pamela has been cooking up a storm for the holidays, making old fashioned candy canes and ribbon candy with help from Sue. They turned out beautiful, showing that Handmade Candy in Knife River was a good idea. Pamela is trying new ideas all the time and the candies are successful. Our father showed us how to make candy canes at least 40 years ago, so we consider this a special tradition. We have good memories of pulling the taffy, adding the color stripe and peppermint flavor, stretching, rolling, twisting, bending, and cutting the candy canes.

I went to Hamburg Germany for a week with Frank Sander. What a great trip. I was able to tour a Metro Store on a special business pass arranged by Ove Sander, Frank's nephew. I saw rows of candy, chocolate santas, and Haribo licorice. I brought back a beautiful Santa drewssed in an Ivory suit, licorice snakes, rats, mice, and beautiful licorice pipes, and chocolate santas. I also visited Lubeck, Germany and toured the beautiful two story marzipan store.
